The cracklings are the main ingredient of the Neapolitan casatiello and of the fried filling. Very tasty with bread, ricotta and pepper; good cubes with salt, pepper and lemon; excellent accompanied with friarielli and provolone. Obtained by cooking pork belly pressed into special moulds, cooled and then cut into slices or quarters. The weight of the product can vary from 4 to 5 kg for the whole piece.
