Guanciale is compact and has a good consistency, it is preferred to pancetta in the preparation of pasta alla carbonara and pasta all’amatriciana due to its strong flavour. Product obtained from pork throat, salted, washed and dried, aged for a minimum of 40/50 days. The weight of the product can vary from 1.2 to 1.5 kg for the whole piece.
