Stuffed into Naturin casings, after resting for about 8 days in special rooms, it is aged for 75/120 days according to the calibre. Fragrant and very soft, capicollo has a strong but delicate flavor to be enjoyed accompanied with bread, cheese and dairy products. Also ideal on pizza or for a few main courses of meat. The weight of the product can vary from 1.5 to 1.8 kg for the whole piece and from 0.6 to 0.8 kg for the half.
